Lentil sprouts, or different types of pea sprouts, are very tasty and can be eaten raw or cooked. Add them to salads, soups, casseroles or steam or stir fry them with other vegetables. Lentil is rich in vitamins A, B, C and E, the minerals iron, calcium and phosphorus.

To sprout, use 1 tablespoon seeds per quart jar. Soak in water 10 - 12 hours, then drain. rinse seeds 2 - 3 times a day until raeady to use (about 5 days). Yields 1 cup sprouts.
